Ingredients
1 medium avocado
125 ml smoked snoek, flaked

125 ml creamy mayonnaise
freshly ground black pepper and salt to taste
Method:
Preheat the oven to 180 ºC. Halve the avocado and remove pip. Mix half the mayonnaise with the snoek and season with black pepper and salt. Fill the avocado halves with the smoked snoek and top with the remaining mayonnaise. Bake for 10 min and serve with mixed lettuce. Sprinkle with olive oil and balsamic vinegar if desired.

crusty topped smoked snoek pie
Ingredients
50 g butter
25 g flour
300 ml milk
125 ml cream
50 ml freshly chopped parsley
15 ml lemon juice
4 leeks, sliced
1 green pepper, sliced
250 g fresh button mushrooms, sliced
500 g smoked snoek, boned and flaked
TOPPING
100 g flour
40 g margarine
70 ml grated Cheddar cheese
Method:
Melt half the butter and stir in the flour. Cook for 1 min, then add milk gradually, stirring continuously till smooth and thick stirring until thick and smooth. Remove from the heat and stir in cream, parsley and lemon juice. Cool. Heat the remaining butter and sauté leeks, pepper and mushrooms till soft. Place fish in a greased ovenproof dish and sprinkle cooked vegetables over. Cover with sauce. TOPPING Place flour in a bowl and rub in butter with your fingertips. Mix in cheese and sprinkle over fish mixture. Bake in a preheated oven at 190 ºC for 50 minutes. To freeze: Cool thoroughly then cover, seal well and freeze. Bake from frozen in a preheated oven at 190 ºC for 1 hour.

Ingredients
1 kg smoked snoek, deboned and flaked
250 g smooth cottage cheese with chives
1 bunch parsley, finely chopped
Method:
Process the snoek and cottage cheese in a food processor. Roll into small balls and roll the balls in the finely chopped parsley. Chill until ready to serve.

Ingredients
250 g smoked snoek, deboned and flaked
250 ml baby peas
250 ml spaghetti, drained
15 ml finely grated onion
410 g cream of celery soup
85 ml milk
190 ml breadcrumbs
50 ml Cheddar cheese, grated
butter
Method:
Preheat the oven to 190 ºC and butter a 25 cm oven dish or spray with non-stick spray. Lightly mix the snoek, baby peas, spaghetti and onion. Mix the soup and milk and add to the smoked snoek mixture. Turn into the prepared oven dish. Sprinkle with breadcrumbs and grated cheese, dot with butter and bake for about 20-30 minutes until golden brown and done.

Ingredients
750 ml deboned and flaked smoked snoek
500 g cream cheese or cottage cheese (smooth)
50 ml mayonnaise
1 onion
2 gherkins
30 ml chopped fresh parsley
salt and freshly ground black pepper
Method:
Place all the ingredients in a food processor and process until smooth. Season to taste with salt and black pepper. Chill until firm. To make a coarser paté mix the ingredients with a wooden spoon.

Ingredients
CHEESE SPREAD
750 ml grated sweetmilk cheese
30 ml hot milk
90 ml strong chutney
1 ripe avocado
little fresh lemon juice
1 large French loaf, sliced diagonally
200 g smoked snoek, debones and coarsely flaked
105 g smoked mussels, drained
Lettuce, coarsely shredded
cocktail sticks
Method:
Place the cheese and milk in a food processor to form a purée. Heat the chutney and add to purée. Process until smooth, put into a dish and cool. Skin the avocado and slice thinly. Sprinkle with lemon juice. Spread slices of bread with the cheese spread and arrange a slice of avocado on top. Place pieces of snoek, a little shredded lettuce and a mussel on top and secure with a cocktail stick. Chill until before serving.

Ingredients
1 onion, finely chopped
oil
500 g fresh, smoked snoek, flaked
CRUST
65 ml cake flour
10 ml baking powder
pinch salt
15 ml butter
125 ml milk
1 extra-large egg
Method:
Preheat the oven to 180 ºC. Spray a small oven dish with non-stick spray. Sauté the onion in a little oil until tender and add the flaked snoek. Mix and put into the prepared oven dish. Sift the cake flour, baking powder and salt together and rub in the butter. Whisk the milk and egg together. Add to the dry ingredients and mix until smooth. Pour over the snoek and bake for 20 minutes or until the crust is brown.
